Celebrate the Nation’s 74th Independence Day with special culinary delights that are inspired by fun Independence Day celebration activities at 1945 Restaurant at Fairmont Jakarta. Served exclusively on August 17 and 18, 2019 for dinner, the 4-course tasting menu prepared by Fairmont Jakarta’s Chef de Cuisine, Adhtia Julisiandi, will take you on a walk down memory lane and rekindled the fun activities played during Independence Day.

Start the culinary journey with “Pensil & Botol”, a dish that was inspired by a classic game where the participant must put a pencil into a bottle. Chef Adhitia creates a whimsical edible pencil served with a delightful dip made of chicken and kuah opor. The second course is inspired by “Tangkap Belut” competition and consists of Chargrilled Eel, Pickled Cucumber, Kari Mayo and Fermented Ikura. Another one on the list is inspired by “Balap Karung” or Sack Race, and is made with marinated sweet skin tofu stuffed with prawns, octopus and black mussel.

For main-course, the menu is inspired by one of the most iconic activities in the celebration of Independence Day, “Panjat Pinang” (Palm Climbing). Panjat Pinang is usually done by a group of people where they need to work together to reach the top of the tree that has been covered by oil. At the top there are prizes to be won. 

Chef Adhit will be using braised beef cheek that has been cooked for 38 hours to replicate the tree. The condiments include Kecombrang Cassava, Black Garlic, Burnt Carrot and Tendon Cracker with Andaliman Sauce. Chocolate bon bons filled with exotic fruits gels including nangka, avocado and coconut pandan, complemented with sorbet es puter, coconut toile and vanilla Chantilly cream, will serve as sweet treats to end the celebration.
